The Casa Rinaldi spaghetti is the worlds most popular pasta. Spaghettini is a finer, thinner version.
The pasta is produced using an authentic method called bronze drawing. Drawing is the process in which the dough (consisting of semolina flour and water) is passed by extrusion through a mould that has holes of different shapes and sizes from which the desired pasta shape is produced.
At the end of the process there are a series of rotating knives which cut the pasta to the required length.
This technique is combined with two processes: lamination and drying. The drying phase is slow and takes place at very low temperatures. The bronze-drawn pasta is wrinkled and has an opaque colour - it holds condiments very well. The flavour of the pasta is more delicate.
Spaghettini is such a versatile pasta it can be used with any sauce. The perfect Italian combination is with a tomato based sauce with a sprinkling of cheese on top.
Everyone should have a packet of Casa Rinaldi spaghetti in their pantry.
As this is a very fine pasta, it is best suited with soups and broths.
